Ask someone in your company to take two weeks off. Where the work quietly stops is where your processes actually live.
Nobody decided to make one person the single point of failure for that work. The absence of anything written down decided it.
Manuals do not fix it. They record the steps, and the steps were never the hard part. The decisions are what is missing: which exceptions get approved without asking, what "urgent" means when two things are urgent at once.
Pick the process you would struggle to hand over and write down the decisions, not the clicks. That document is the only thing software can be built from.
