PSA: Yes, something is broken with Apple Mail and Microsoft email addresses, we've been fielding calls about it all day. Doesn't matter who's at fault, here's the fix:

Download the official Microsoft Outlook app for your platform, works on iPhones and Android (Pixel, Galaxy, etc) without issues, looks very similar to what's on your computer.
