ISSUE: Perceived Temperature Variances (Under-Heating or Over-Heating)
Avoid solely relying on analog dial thermometers, as they are susceptible to mechanical lag and grease buildup over time, which can lead to inaccurate readings.
Testing Protocol: For the most precise data, utilize a digital probe thermometer. If using an analog device, place it on the center rack and allow the oven to complete a full preheat cycle followed by an additional 20-30 minutes of "soak time" to allow the cavity temperature to stabilize.
Calculating the Average: Modern ovens operate on a heat wave (cycling on and off). To find the true accuracy, record the high and low temperatures during cycles and calculate the average.
Calibration Hack: If a consistent offset is identified after a full preheat, refer to the manual. Most electronic models allow for a thermostat offset adjustment via the control panel. On gas models, gas pressure can be adjusted to reach the desired thermal average for best baking results.
