Tomorrow on Outside the Box.

Jeff Delahunt spent 23 years in hospital dining before overseeing the foodservice design for Dayton Children's newest facility, a secure 48-bed behavioral health center with its own set of needs.

Almost nothing about a normal cafeteria model applied. So he had to rethink it from scratch.

Watch for it!

Some brands spend years developing, testing, and marketing the thing their customers will hightail it across town to try.

And then it's: "Yeah, just put it on the shelf with the others."

Pickup deserves a better plan.

Nine times out of ten, nothing "went wrong" when an order goes missing.

Your staff didn't hide the correct bag from the customer. Nobody handed it off to the nearest "Steve" because they love chaos.

The order just got touched too many times. Complete, set down, shuffled, grabbed, re-grabbed, handed off, re-checked…every touch is a chance for it to end up in the wrong hands.

And a manual handoff can rack up what, four or five touches before a guest ever gets their food? Yowza.

Automate it, and the order gets touched once, maybe twice. Complete, placed in a locker, picked up by the correct guest. (Chaos not included.)

“I make it look easy.”

Michael King has been greeting guests at the door of Monell's in Nashville since 1995. Here’s what they’ll never see: the ice maker problem, the attitude with a server, the credit card machine running slow, the two people on hold — all happening at the same time.

Thirty years of that. And he wouldn't have it any other way.

His episode of Outside the Box is live now.

It's the middle of your lunch rush.

Your crack front-counter crew is assembling orders, running the line, keeping pace.

Then a driver interrupts the counter because they can't find their order on the shelf — and they're not, we'll just say, using their best inside voice.

[Cue: record scratch]

Now that same crew is hunting down a bag, calming a driver, confirming a name, and finally handing off a delivery.

Sounds like a two-minute task, but it's not. It's a walk, a search, and a mental reset before they're back to what they were actually hired to do.

Now multiply the ones like this by every shift. Your crack crew wasn't hired to be pickup au pairs.

Every pickup problem, and we're talking digital, operational, physical, eventually shows up in one place: how long an order sits before the right person picks it up.

Short dwell time means orders aren't going cold, getting mixed up, or grabbed by the wrong person. The counter stops backing up, too.

Most operators try to fix everything around pickup, but the target is much narrower than that.

Most pickup fixes target the wrong problem.

Operators tweak the menu, retrain staff, add signage, shelves, or rework the app. All reasonable moves.

But every pickup issue we’ve ever come across, whether it started as a digital glitch, an operational hiccup, or a physical handoff problem, ends up showing the same way:

A lonely order sitting too long before the right person grabs it.

Cut dwell time and those orders stop going cold. They also stop getting mixed up, or grabbed by the wrong person. The counter stops backing up, too.

It's one narrow target instead of a dozen scattered ones, for sure. Which is exactly why most operators miss it.

When customers are in a rush (and what customers aren't these days), a wrong order isn't just an inconvenience.

It can change how often they come back, how much they spend when they do, and whether they recommend you at all.

The cost of that mistake is sneaky. It doesn't show up clearly in a report.

But you'll feel it with fewer repeat visits, smaller average orders, and guests who quietly stop choosing you

Last day in Booth #5821 at the .

And we're leaving Chicago with two critical bits of information:

1. Never skimp on a good pair of insoles
2. Operators across every segment — restaurants, colleges, casinos, and more — are done patching pickup. They're ready to solve it.

That's what we're here for.
