Outside of work, Jacob enjoys baking sourdough with a starter he has kept alive for nine years. His next challenge is shokupan, or Japanese milk bread, using the new bread pan he received for his birthday.

He’s also a video game fan eagerly awaiting the November re-release of The Legend of Zelda: Ocarina of Time, though he may have to compete with his son for control of the Switch 2. When he’s not baking or gaming, you’ll likely find him camping, hiking or kayaking the Sacramento River with his wife.

One especially unusual fun fact: Jacob can flex his tensor tympani muscle, better known as his eardrum!
