If for the storage of varieties of apples or pears, especially those grown in the south, elevated temperatures (+3 ... + 4 ° C) are needed, then to reduce the intensity of respiration of fruits and the development of microflora, a gaseous environment is created with a minimum amount of oxygen and a maximum amount of carbon dioxide, which provides an increase in the duration of storage, that is, the onset of physiological maturity is postponed. Since this mode of storage requires significant material and energy costs, it is used only for fruits of the highest and first commercial grades.
