The ultimate retro classic! 🥪✨ There’s a reason egg & cress sandwiches have been a family favourite for generations, and it’s bringing back all the memories of childhood picnics and long car journeys when my Mum would make them for us (and she still does) 🤍 It’s actually her birthday today, so a very Happy Birthday to the woman who taught me so much, including how the most classic recipes are often the best! 🎂✨ These sandwiches are simple, familiar, and still such a comfort - perfect for picnics or trips out at this time of the year. It's really disappointing when a beautiful pot of basil wilts just two days after buying it! 🌿 A quick basil tip for summer: If it’s potted, keep it at room temperature, water from the bottom, and pinch leaves from the top. Splitting pots help them last longer. 😉 If it’s trimmed basil, trim the stems, stand them in a glass of water, and loosely cover with a clear plastic food bag 💧 What is your favourite summer recipe that uses fresh basil? 🍝

🍅Tomato season always makes me crave this bruschetta - tomatoes, aubergine, red onion, garlic, a little chilli, basil and extra virgin olive oil… all piled onto toasted sourdough that’s been rubbed with garlic & oil. Simple, tasty, a little messy to eat, but exactly what I want at this time of the year. What's your favourite summer sourdough topping?🍞

I recently had a Caesar salad with amazing beef-fat croutons, but the watery, flavourless tomatoes nearly ruined it! 🍅 It reminded me that even the best recipes need ripe, room-temperature tomatoes for maximum flavour.

For British Tomato Fortnight, here is my secret: keep them out of the fridge! Store them stem-side down on a plate or open container and away from direct sunlight, to keep them fresh and full of flavour. ✨

The idea for Cook’s Tidy started in my living room in 2011, born from the frustration of recipe clutter. 📚 It took 10 years before I could build it, and even a major kitchen leak in 2023 just paused things for a while! 🏠
