Seasonal and super tasty! 🤩

Today we want to share with you a recipe for pumpkin soup. 🥘

Now when it's getting chilly in the evening, you can make yourself comfortable on the couch with a hot pumpkin soup.

Here's what you'll need (4 servings):

1 Hokkaido pumpkin
1 onion (red or white)
1 clove of garlic or as many as you want 😄
1 tablespoon of butter or vegetable oil
1 liter of vegetable broth
100 ml whipping cream or as a vegan alternative coconut milk
Salt
Pepper
parsley to garnish

1.
Cut pumpkin in half, quarter and scrape out seeds with a tablespoon. Wash pumpkin, dry and cut into pieces. Peel and dice onion. Peel and chop garlic.
2.
Melt/heat butter or oil in a pot. Sauté onion and garlic until translucent. Add pumpkin and sauté briefly. Deglaze with vegetable stock and season with salt and pepper. Cover and simmer on low heat for about 15 minutes.
3.
Add about 3/4 of the cream or coconut milk and puree everything finely. Season again to taste. Serve the pumpkin soup with the rest of the cream and pepper and chopped parsley to taste.

Tip: The pumpkin soup can also be frozen and can be enjoyed again later! 🎃
