An owner of a bakery chain from Moscow requested us to check the integrity of the cashiers. Now his business is developing actively and he has no time for checking the work of the employees at the new sales points.
For a month our specialist monitored sales using video analytics, comparing sales with the sellers’ actions. As a result a cashier was uncovered who regularly deleted tea and coffee from receipts and took the money. It seems that one cannot lose a lot of money on coffee and tea, but let’s make some calculations. The price of Americano is 2 Euro on the average. During a day 10 drinks are taken through a cash register, and 5 off the books. As a result, a cashier pockets 100 Euro per day. In 15 shifts 1500 Euro is accumulated. And this is only for one drink.

With bottled water for drinks everything is clear. It is delivered in bottles at a certain price. You can create an Assortment item «Bottled water», indicate the purchase price and include it into the specification. Water is received, consumed, prime cost is calculated correctly.

But what to do with tap water which is passed through a filter and used without measurement? It has no purchase invoice, we use it in large amounts, and it is very hard to calculate the prime cost. But not to include water in specifications will not be right. Because, if the boiled rice specification includes only 300 g of dry rice, the output will be calculated incorrectly. And the prime cost of dishes including this semiproduct will be untrue.
