Rita Klavinski, from Michigan State University Extension, explores the many benefits eating locally grown food has for both consumers and the community.
Products that are part of extensive supply chains traverse huge distances around the globe before reaching their final destinations. This process can include months of shipping, processing, packaging and storage before making it to shelves and into the hands (and stomachs) of consumers. Shorter times between harvesting and landing on the table mean the highest value of nutrition is maintained in the food; something Klavanski would like to see more of.
Eating locally grown foods has many benefits for the consumer, grower and the community.
