Eating lots of vegetables and fruits is healthy: easier said than done. 🤷♀️ Today's "day of healthy eating" (in German speaking countries) inspired us to ask three Anexians for tasty recipes using the vegetables and fruits that are weekly delivered to our offices. Salad with pear and cheese 🍐🧀🥗
1 celery cabbage (cut into thin slices)
1 pear (cut into thin slices)
100 g blue cheese (cut into thin slices
a few walnuts or else
For the vinaigrette mix honey, salt, cider vinegar and (good) salad oil
Apple cucumber smoothie 🍎🥒
1/2 cucumber (with peel)
1 apple (with peel)
juice of an orange or lemon
100ml water
Blend it all together
Cucumber cream salad 🥒
2 cucumbers (cut into thin slices, with peel)
1 cup of sour cream
juice of 1/2 lemon
vinegar, salt, pepper
Chop the cucumber and squeeze it. Add sour cream, lemon juice and salt. Add vinegar and pepper to taste.
