Chat Gpt helped me with explaining something i mentioned in a live today. Milk when heated up makes a sugar/sweetness but if over heated soes not work the same
The sweetness that develops when milk is heated comes from a process called the Maillard reaction and the breakdown of lactose (milk sugar).
Here’s a simple explanation:
• Lactose Breakdown: When milk is heated, some of the lactose (a naturally occurring sugar) breaks down into simpler sugars like glucose and galactose, which taste sweeter than lactose itself.
• Maillard Reaction: When milk proteins and sugars interact under heat, they create new flavor compounds that enhance the perception of sweetness. This is the same reaction that gives browned foods (like toast or roasted coffee) their rich flavors.
