Novo Nordisk — yes, the Ozempic maker — just dropped $7.6 million into an AI-powered project to revolutionize plant-based meat… and here’s the twist: it’s all about cutting out ultra-processing.

Backed by the University of Copenhagen, the new AI4NaturalFood project will run for 7 years, using artificial intelligence to create plant proteins that are less processed, more nutritious, and more sustainable.

Why this matters:
- Most alt-meats today are highly processed.
- This project focuses on “mild processing” — preserving more of the plant’s natural structure.
- Uses less water and energy.
- AI predicts how food behaves before it’s even made.

Amid growing scrutiny of "ultra-processed" foods, this could be a game changer for the future of food.

But not everyone's cheering — Novo’s also facing backlash for trying to redefine what counts as ultra-processed. Over 90 experts are pushing back.

Still, this project could be a powerful step toward a healthier, more sustainable food system.

Research Overview:
Fermented foods such as yogurt, kimchi, sauerkraut, and kefir are rich in beneficial bacteria that support a healthy gut. These probiotics play a key role in maintaining gut health, which is linked to improved mood, better digestion, and enhanced immune function.
Studies from the American Journal of Clinical Nutrition have shown that regularly consuming fermented foods can help reduce bloating, improve gut microbiota diversity, and enhance digestion.

Study Results:
A study published in Frontiers in Microbiology found that individuals who consumed fermented foods had a more diverse and healthier gut microbiome, leading to better digestion and overall health.

DID YOU KNOW: A plant-based diet can reduce the risk of developing Type 2 diabetes by up to 50%, according to recent studies.

Research Overview:
A plant-based diet, which focuses on whole foods such as fruits, vegetables, legumes, nuts, and seeds, is packed with fiber, antioxidants, and healthy fats that regulate blood sugar levels and improve insulin sensitivity. This type of diet helps reduce the risk of Type 2 diabetes, which is increasingly prevalent due to rising obesity rates and poor diet.
In a study published in JAMA Internal Medicine, participants who followed a plant-based diet had a significantly lower incidence of Type 2 diabetes. These individuals also experienced improved blood glucose control, weight loss, and a decreased reliance on medications.

Study Results:
The JAMA study found that individuals on plant-based diets experienced a 50% reduction in Type 2 diabetes risk and had better overall metabolic health compared to those who ate diets high in animal products and refined carbohydrates.

DID YOU KNOW: Diets high in fiber are associated with a reduced risk of colorectal cancer by up to 20%.

Research Overview:
Fiber-rich foods, such as fruits, vegetables, whole grains, and legumes, are essential for digestive health. High-fiber diets have been found to protect against colon cancer by promoting regular bowel movements and feeding beneficial gut bacteria, which in turn helps lower inflammation and oxidative stress—both risk factors for cancer. Additionally, fiber binds to potential carcinogens and removes them from the body more efficiently.
Research from the American Institute for Cancer Research shows a strong link between high fiber intake and reduced risk of colorectal cancer. Fiber also plays a role in controlling insulin and estrogen levels, which are linked to other types of cancer, including breast cancer.

Study Results:
A meta-analysis published in The Lancet found that increasing fiber intake by just 10 grams per day could reduce colorectal cancer risk by 10%.
