Fried Calamari is a restaurant favorite. But, did you know that it's easy to make at home and costs a lot less?

*** FRIED CALAMARI ***

1/2 cup milk
1 lb calamari, fresh or frozen, cut into rings
1/4 cup corn meal
1/2 cup flour
1 teaspoon salt
Heat deep fryer to 375. Pour milk in bowl and add calamari. In plastic freezer bag, combine dry ingredients. Pick-up calamari by the handful, letting excess milk drip off, and place in bag. Shake and drop in fryer until golden brown (1-2 mins).

Serve with lemon wedges, cocktail sauce, aioli and/or tarter sauce.

WHERE CAN YOU BUY CALAMARI?
1. Walmart sells a 1 lb bag in the frozen seafood section for $5 (check their website to make sure it's in your local one).

2. WHOLE FOODS sells frozen, defrosted in their seafood deli for $9.99 lb. (in CA)

Real caramel sauce is delicious. But, it makes a mess of the pan and can be tricky to get it to the right consistency without burning it.
There is a better way:

***Easy "Caramel" Sauce***
Take 1 can of sweetened condensed milk and put in the slow-cooker on low with water up to the top of the can for 8 hours

No pan to clean and the perfect consistency. Drizzle over ice cream, frost cupcakes, dip fruit in it...the list is endless

Although many people make this with the top still on the can, the label warns against leaving the lid on because the can might explode.

Want to impress your Valentine? Whip up this 7 minute, no-bake pie -- rich, creamy, crunchy and peanut buttery, it's the perfect dessert for Valentines day!

** NO-BAKE-7-MINUTE BUTTERFINGER PEANUT BUTTER Pie ***
1 graham cracker pie crust (9")
1 package cream cheese, softened (8 oz.)
1 can sweetened condensed milk (14 oz.)
1 cup sour cream
1/2 cup peanut butter
2 1/2 cups Cool Whip
2 crushed Butterfinger bars

In a mixing bowl, beat the cream cheese on medium. Add the sweetened condensed milk and sour cream and beat until creamy. Reserve 2 cups of the mixture in a separate bowl. Add the peanut butter and beat until smooth. Spoon into the bottom of the pie crust.

Fold 2 cups of Cool Whip into the bowl with the reserved cream cheese mixture. With a plastic spatula, spread over peanut butter layer. Refrigerate for at least 2 hours to set.

Unwrap Butterfinger bars, place on cutting board and cover with a sheet of plastic wrap. Pound lightly with meat tenderizer. Sprinkle pieces on top of the pie. Place remaining Cool Whip in pastry bag and pipe along edge.

Makes 1 - 9 inch pie. Keep refrigerated.

How far can you stretch a $5 Costco Rotisserie Chicken?

Tara the Kitchen Hound:
I can feed a family of 4 people 3 meals and then throw the carcass into a pot of water with some fresh herbs and make REAL stock:

Day 1 - Serve warm with salad and mac and cheese
Day 2 - Chinese Chicken Salad
Day 3 - Kung Pao Chicken
Bonus - REAL chicken stock
