🥦 Broccoli Cheddar Soup
Ingredients
• 500g frozen broccoli, about 5 cups
• 2 tbsp olive oil
• ¼ cup (55g) butter
• 1 small onion, diced
• 2 cloves garlic, minced
• ¼ cup (30g) flour
• 4 cups chicken broth (I use homemade bone broth, but store-bought chicken or vegetable broth works too!)
• 1 large carrot, shredded
• 2 cups milk
• 2 cups shredded cheddar cheese
• Salt + pepper to taste
Instructions
1. Toss frozen broccoli with olive oil, salt + pepper. Air fry at 400°F for 12–15 minutes, until tender with some browned edges.
2. Melt butter in a large pot. Cook onion until soft, then add garlic for about 30 seconds.
3. Stir in flour and cook for 1 minute. Slowly whisk in chicken broth.
4. Add shredded carrot and simmer for 5–8 minutes until it starts to soften.
5. Add broccoli and simmer another 5 minutes. Blend some of the soup with an immersion blender, leaving some broccoli pieces.
6. Turn heat to low. Stir in milk, then cheddar cheese until melted and creamy. Season with salt + pepper.
And that’s it! The broccoli soup my picky kids somehow ask me to make again and again. 😂
